Ingredients for 4 people:

  • 400 g of flour
  • 4 eggs
  • 9 g of salt

Tools needed: food processor, planetary or mixer.
Necessary accessories: hook, flat whisk.
Recommended accessories: recommended: dough roller, pasta cutter. Alternatively, a large work surface and rolling pin.

Here's how to proceed to make fresh pasta with the food processor with mixer, using the planetary mixer or mixer. These procedures are valid both for the Kenwood appliance and for a KitchenAid or any other mixer.

  1. Start with the flat beater.
  2. Put all the ingredients in the bowl: flour, salt and eggs.
  3. Blend for a few minutes on low speed. You need to get a homogeneous but not compact mixture.
  4. Replace the flat beater with the hook.
  5. Work the dough for 5 - 6 minutes at low speed. Increase the times if after 5 - 6 minutes you have not obtained a soft, compact and non-sticky dough.

The loaf of fresh homemade pasta, thus obtained, must be wrapped in transparent film and left to rest for 30 minutes.

Divide the dough into three smaller loaves and roll them out one at a time.

You can roll out the dough with the same planetary mixer, using a dough sheeter or a 2-in-one accessory, or with a rolling pin.

  • 400 g of durum wheat flour
